On Tuesday I took Landon for another round of bloodwork....they were able to find a vein this time and so it didn't take too long, but it took 3 of us to hold him down because he didn't like it very much! Today I got a phone call from the Pediatrician and she said that his bloodwork is completely back to normal so we can stop with all of the iron and vitamin supplements! YEAH!!!! Finally back to normal and it feels good!
And tonight I wanted to make a yummy salad for dinner, so I decided on a Sante Fe type salad. I found a recipe for a dressing and I kind of changed it a little bit so that it wasn't quite as strong and it turned out SO yummy so I thought I'd share it with you:
Cilantro Dressing
3 cloves garlic
1 tablespoon minced ginger
1 bunch cilantro
the juice of 1 lime
1 1/2 tsp white wine vinegar
1/2 tsp cumin
3/4 tsp salt
1/2 tsp pepper
1 tbsp honey
1/2 cup grated parmesan cheese
1/2 cup canola oil
1/4 cup olive oil
Put garlic, ginger and cilantro in a food processor and chop good. I then put these ingredients into my Pampered Chef dressing container and added the rest of the ingredients, mixing well. You could also finish in the food processor or in a bowl, whichever you have.
And then I put lettuce, red onions, peppers, black beans, corn, shredded cheese and grilled chicken on a plate and poured the dressing over top. It was YUMMY! If you try it, I hope you enjoy :)
