
Tonight I wanted to make a side dish to go with salmon and I had quinoa. We have been eating quinoa a lot lately, in place of rice. Its great for a salad or eating it hot with spices on it. I was searching quinoa recipes online and found this one and it was SO good!
Quinoa and Sweet Potato salad
* 1 cup quinoa, uncooked
* 2 cups vegetable broth
* 1 sweet potato, baked and diced
* 1 red bell pepper, diced
* 2 tbsp olive oil
* 1/4 tsp cayenne pepper
* 2 tbsp lemon juice
* salt and pepper to taste
Simmer the quinoa in the broth for about 15 minutes or until all the water is gone. Toss the bell pepper, sweet potato and quinoa together in a bowl. Mix the olive oil, cayenne pepper and lemon juice in a separate bowl and then toss onto quinoa mixture. Serve hot.
(I was out of cayenne pepper but I used red pepper flakes and it was fine)
